Vintage 2006 Blend: For the 2006 vintage, Dom Pérignon Vintage Plénitude 2 is composed of 45% Chardonnay and 55% Pinot Noir. Grape sourcing: Dom Pérignon has the exclusive privilege to select grapes among the 17 Grand Crus of Champagne and the Premier Cru of Hautvillers. Winemaking: The winemaking philosophy of Dom Pérignon is minimalist, without artifice, and considers oxidation as the enemy. The blend, the founding act of Dom Pérignon's uniqueness, is guided by timeless principles. The slow and prolonged maturation on lees is the counterpart to elevating Dom Pérignon among the most complex wines. Harvest: More hot than dry, 2006 was almost tropical due to alternating periods of sun and rain. After a late spring, a heatwave in July was followed by a cold and rain-soaked August. The heat came back in September, allowing the grapes to reach a generous ripeness, by drying out the few pockets of botrytis and offering a maturity that is well above average. The harvest begins on September 11th and spreads out over nearly three weeks. Elaboration: 18 years of crafting.
